Like a true mom, I can't just leave you hungry while you wait patiently for "dinner". So, I made a little something to hold you over: {Reduced Fat}Peanut Butter Chocolate Chip Apple Dip!
You've probably seen a lot of wonderful recipes for apple dip online. The concept is nothing new. What's different about this recipe is that I've taken some steps, in the creation of my original recipe, to reduce the fat. I'm still not going to recommend that you eat it every day (even though you'll probably want to), but if you get the occasional sweet tooth and would like to squeeze in some nutrition -- protein, calcium, fresh fruit -- without sacrificing taste, you should give this easy dip a try.
Fluffy Peanut Butter Chocolate Chip Apple Dip
- 1 stick butter, softened
- 4 oz. light cream cheese, softened
- 3/4 cups reduced fat, creamy peanut butter
- 1 1/2 cups confectioners' sugar
- 1/2 cup mini chocolate chips (or more, to taste)
- Sliced tart apples
- In the bowl of a mixer, whip (with whisk attachment) cream cheese, butter, peanut butter, and salt until combined. On low speed, add confectioners' sugar, one 1/2 cup at a time.
- Once sugar has been incorporated, bring speed up to high and whip until light and fluffy. Note: The ingredients may appear to separate at first if your room is warm, or your butter was too soft. Don't fret. Continue to whip air into the frosting to emulsify the fats and achieve a smooth, fluffy texture (up to five minutes).
