Chicken Parmesan Pizza


Recently I had mentioned to Blair that I want to hold a pizza party at our house. There are so many great options when it comes to pizza toppings that sometimes it is hard to pick just one for Blair and I. I thought it would be fun to have couples choose a type of pizza they wanted to make and then serve it up so everyone could get a taste. This way people could get a sampling of lots of different pizza combinations. I may have mentioned this to several different groups of friends so we may have to see which group wins out in the end ;) .


Whoever we choose to celebrate with, I already have several combinations that I would choose as our pizza. This one is definitely on the list. I absolutely love Chicken Parmesan so when I saw it in pizza form, my interest was piqued. This one did not disappoint either! You swap out the classic pizza sauce for marinara, top with some breaded Parmesan chicken that has been pan seared, and top with the classic cheeses. It results in a unique pizza that will knock your socks off. Friends, feel free to get on my good side and I might just choose your group to invite over for my pizza party!



Chicken Parmesan Pizza


Ingredients:
1 tbsp. olive oil
1 tbsp. unsalted butter
1 large boneless, skinless chicken breast, butterflied
Kosher salt and freshly ground black pepper
1 egg, beaten with ½ tsp. water
½ cup bread crumbs
1 tsp. dried basil
1 tsp. garlic powder
2 tbsp. grated Parmesan cheese, plus more for topping pizza
1 ball pizza dough
about ½ cup marinara
about 2 cup shredded mozzarella cheese
Fresh basil, for garnish


What you’ll do:


Preheat oven to 450° F. Place a pizza stone in oven and allow to heat for at least 30 minutes. Combine bread crumbs with dried basil, garlic powder, and Parmesan cheese in a small bowl or shallow dish. Season chicken with salt and pepper. Dip chicken into the prepared egg mixture and coat thoroughly. Dredge in bread crumb mixture, being sure that chicken is well coated, pressing the crumbs into the chicken, if needed.


In a medium skillet over medium high heat and add oil and butter.  Once the pan is hot place the chicken in the pan and cook for 4-6 minutes per side, until fully cooked. Remove from pan and pat with paper towels to absorb oil. Let cool for 3-4 minutes and then cut into chunks.


Set a large piece of parchment paper and form dough into a large circle. Bake untopped pizza dough for about 5 minutes. Carefully remove dough from oven and spread marinara  over dough, then top with prepared chicken. Add mozzarella and additional Parmesan cheese. Return pizza to the oven and bake for another 10-15 minutes, until dough is crispy and cheese is beginning to brown. Sprinkle with fresh chopped basil.
